Ingredients For The Filling

  • 60g of flour

  • 120g of powdered sugar

  • 30 g of butter

  • 4 eggs

  • 1/2 teaspoon baking powder

  • vanilla flavouring

  • Jam

  • Pastry

Ingredients For The Pastry

  • 500g Flour

  • 180g Butter

  • 1 Table Spoonful Soft Sugar

  • 1 Teaspoonful baking powder

  • 4 yolks of eggs

  • 2 whites of eggs

  • Milk

Preparing The Pastry

1 Sieve the flour and baking powder into a basin and mix in the sugar and salt. Add one third of the butter and rub together with the tips of the fingers and thumbs until as fine as bread crumbs.

2 Make a well in the center add the eggs well beaten and enough milk to make a softish dough. Turn on to a floured board and knead lightly until free from cracks. Then flour the board and roll the paste out into a long narrow strip. Divide the remainder of the butter into four equal portions put one portion on the paste in small pieces.

3 Flour the surface lightly and fold it in three. Roll out the paste again and proceed as before until the three remaining portions of butter have been used. Then roll out the paste to the thickness required.

Method Of Preparing The Lavinia filling

1 Beat the butter and 60g of the sugar to a cream and beat in the eggs leaving out the whites of two. Mix in the flour gradually and lastly the baking powder.

2Line some patty pans with the pastry, put a little jam into each, fill up with the mixture and bake in a moderate oven for about twenty minutes.

3 Take them out of the pans and let them cool. Then whip the two remaining whites of eggs to a stiff froth with the 60g of sugar and spread smoothly over the tart-lets. Place them in a cool oven just to set the icing.
